Best Homemade Tortillas
You will need 3 cups or flour. 1 teaspoon of salt. 1 teaspoon of baking powder. 1 cup of water. 1/3 cup vegetable oil. For convenience I recommend a mixer with dough hooks, but mixing the dough by hand works just as well and can even be more thorough at times.
Mix all ingredients into a ball of dough
roll the dough out into a large even cylinder
Cut into even portions,
Roll the cut portions into thin tortillas. Putting a little bit of flour down on the rolling surface helps the settles dough to not stick to the surface. They probably wont be perfect circles like store bought tortillas. I know mine for sure are not.
Put into a dry heated pan until golden on both sides. And if you’re lucky you will get bubbles. Make sure to not grease the pan at any point.
Enjoy!
Mexican Shrimp Cocktail
What you will need is 1-2 lbs of peeled and cleaned large shrimp. Make sure to take the tails off of the shrimp. 4 -5 strips of green onions. 2 large tomatoes. 1/2 cup chopped cilantro. 1/2 cup of chopped white onion. 1 chopped avocado. V-8 tomato juice. Clamato juice also works nicely. Lime juice. Salt and pepper.
Mix all of the dry ingredients into large mixing bowl
Add the tomato juice and lime juice and mix well. The chill the mixture in the refrigerator for at least 30 minutes.
Enjoy!
S’mores Dip
We are going to start with a medium size non-stick pan. A bag of chocolate chips. You can use any chips that you want, my favorite are the Ghirardelli milk chocolate chips. A bag of medium size marshmallows and a box of graham crackers. I prefer cinnamon or chocolate grahams.
We are going to pre-heat the oven to 450 degrees
We are going to pour the chocolate chips into the pan. if you want it a little more chocolaty add another bag of chocolate chips.
We are going to place marshmallows upright on top of the chocolate chips. If you are using jumbo marshmallows cut them in half before putting them in the pan.
Place the pan into the oven for 7-10 minutes. 7 minutes if you want a lighter gooey marshmallow. 10 minutes if you want a more golden crispy top marshmallow.
The finished product. Now dig in with your graham crackers and enjoy!
